Ingredients
- 11 oz pasta
- 1 cup ricotta
- 7 oz sausage
- 3/4 cup milk
- 1 oz pecorino (grated)
- salt
- pepper
Preparation of Pasta with Ricotta and Sausage
Remove the casing and crumble the sausage.
Heat a large non-stick pan without adding any seasoning.
Brown the sausage on all sides, then add the milk, lower the heat and let it cook for five minutes, partially covering the pan with a lid.Separately, place the ricotta in a bowl, add the grated pecorino and a bit of pepper, and mix thoroughly.
Cook the pasta in plenty of salted boiling water and when it’s al dente, drain it, saving a ladle of cooking water to add to the ricotta to make it creamier.Add the pasta to the pan with the sausage, let it absorb the flavors for a minute, mixing well, then turn off the heat and add the ricotta cream, mixing again to blend all the ingredients well.
Serve your pasta with ricotta and sausage immediately, piping hot.
