Pasta with spinach is a tasty spring first course with vegetables, easy and quick to make.

Made with fresh spinach, flavorful and irresistible, it is simple to prepare with few ingredients and is perfect for a quick family lunch or dinner.

Ingredients

  • 11 oz dry pasta
  • 1.1 lb (about 16 cups, loosely packed) fresh spinach
  • 1 clove garlic
  • extra virgin olive oil
  • salt

Preparation of pasta with spinach

  • Clean the spinach by removing any traces of dirt and place the leaves and the more tender stems in a colander.
    Rinse them under running water and then put them in a large skillet with a little water, the peeled garlic clove and a pinch of salt.
    Cover the skillet with a lid and let cook for a few minutes over high heat.

  • Take one third of the spinach and blend it with two tablespoons of extra virgin olive oil and set the resulting puree aside.
    Drain the remaining spinach, empty the skillet and add two tablespoons of oil.
    Put the whole spinach back into the skillet with the oil and let it dry, stirring often.

  • Meanwhile, cook the pasta al dente in plenty of boiling salted water.
    Drain it and add it to the skillet with the spinach together with the pureed spinach, mixing thoroughly.
    Serve immediately, piping hot, your pasta with spinach.
