Ingredients
- 11.25 oz pasta
- 1 cup zucchini
- 7 oz shrimp
- 0.7 oz grana (grated)
- 0.7 oz pecorino (grated)
- 0.7 oz pine nuts
- 1 clove garlic
- basil
- extra virgin olive oil
- salt
Preparation of Pasta with Zucchini Cream and Shrimp
Wash the zucchini, trim them, and grate them.
Place them in a sieve resting on a bowl, lightly salt them, and let them rest for about ten minutes so they lose their water.Meanwhile, clean the shrimp, removing the head, shell, and vein.
Peel the garlic clove.
Heat a few tablespoons of extra virgin olive oil in a large non-stick pan and let the garlic brown in it. Remove it and add the shrimp, sautéing them for five minutes.Take the zucchini again, squeeze them, and put them in a blender with the pine nuts, grated cheeses, and a few basil leaves.
Add also 0.5 cups of extra virgin olive oil and blend until you have a well-creamy and homogeneous mixture.
Cook the pasta al dente, drain it, reserving some of its cooking water, and add it to the shrimp pan.
Toss it for a minute to flavor, adding a little cooking water if necessary, then turn off the heat and add the zucchini cream.
Mix and serve your pasta with zucchini cream and shrimp immediately.
