Pasta with Zucchini Flowers

Pasta with zucchini flowers is a delicious summer main course, very easy to prepare.

Ingredients

  • 14 oz pasta
  • 14 oz zucchini flowers
  • 1 clove garlic
  • 1 oz anchovy fillets
  • extra virgin olive oil
  • salt

Preparation of Pasta with Zucchini Flowers

  • Bring a pot of salted water to a boil for cooking the pasta.
    Peel the garlic clove and chop the anchovy fillets.
    Clean the zucchini flowers by removing the stem, the pistil, and the threads around the calyx.
    Wash them in cold water and let them drain in a colander.

    In a large pan or wok, heat a drizzle of extra virgin olive oil.
    Add the garlic and anchovy fillets.
    Let the garlic brown and the anchovies melt, then add the zucchini flowers.
    Cook for a few minutes, covering the pan with a lid, until the flowers wilt.

    Meanwhile, cook the pasta until al dente and, a couple of minutes before the end of cooking, drain it, reserving some cooking water, and add it to the pan with the sauce.
    Mix until the pasta is cooked, adding some of the reserved cooking water if needed.
    Turn off the heat and serve your pasta with zucchini flowers immediately, adding a sprinkle of grated Parmesan if desired.
