Peach and Yogurt Cake

Ingredients

  • 4 peaches
  • 4 eggs
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 2/3 cup Greek yogurt
  • 1 3/4 cups all-purpose flour
  • Half packet baking powder (8 g)
  • lemon zest (grated from one lemon)
  • powdered sugar (for decorating)

Preparation of the Peach and Yogurt Cake

  • Peel the peaches, remove the stone, and slice them thinly.
    In a large bowl, beat the eggs with the sugar until the mixture is light and fluffy.
    Add the vegetable oil, continuing to work the mixture with the whisk, then also add the yogurt and the grated lemon zest.

  • Finally, add the sifted flour and baking powder.
    Butter and flour a 9-inch diameter cake pan and pour in the prepared mixture.

  • Distribute the peach slices on the surface of the cake and bake it in a preheated static oven at 340°F for about forty minutes (perform the toothpick test to check for doneness).
    Take your peach and yogurt cake out of the oven and let it cool completely before decorating it with a sprinkle of powdered sugar and serving it.
