Ingredients
- 3 peaches
- 4 eggs
- 3/4 cup sugar
- 1/2 cup vegetable oil
- 1 1/3 cup all-purpose flour
- 1/4 cup potato starch
- 1 teaspoon vanilla extract
- lemon zest (zest of one lemon)
- 1 packet baking powder
- 2 tablespoons brown sugar (for finishing)
Preparation of the Peach Bundt Cake
Wash the peaches, remove the pit, and dice them.
Separate the egg yolks from the whites, whip the whites until stiff peaks form, and set aside.
Beat the yolks with the sugar until they are fluffy and frothy.Add the vegetable oil, vanilla extract, and grated lemon zest while continuing to mix with electric beaters.
Incorporate the egg whites with a spatula, using gentle folding motions from bottom to top.
Add the sifted flour, potato starch, and baking powder, always mixing with the spatula until you get a homogeneous mixture.Pour the obtained mixture into a greased and floured bundt pan and sprinkle the surface with the peach cubes, slightly pushing them into the batter.
Sprinkle with brown sugar and bake in a pre-heated static oven at 350°F (180°C) for about forty minutes (do the toothpick test).
Remove from oven, let completely cool, transfer to a tray or serving plate, and serve your peach bundt cake.
