Ingredients
- 1.75 lbs peaches
- 3/4 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/3 cup milk
- 1 egg
- 1/2 tbsp baking powder (half packet)
- 1 lemon
- butter
- breadcrumbs
- powdered sugar (for decoration)
Preparation of the Peach Cake
Peel the peaches, remove the pits, and slice them thinly, placing them in a bowl.
Drizzle with some lemon juice and set aside.
Warm the milk slightly.In a bowl, put the egg and 1/3 cup of granulated sugar and beat with an electric mixer until light and fluffy.
Add the sifted flour, gently incorporating it with a spatula using upward movements.
Dissolve the baking powder in the warm milk and add it to the mixture.Also add the peaches and mix gently.
Butter a 9-inch diameter cake pan and sprinkle it with breadcrumbs, removing the excess.
Pour the peach mixture into the pan, leveling it gently.Distribute some butter flakes on the surface and sprinkle with the remaining granulated sugar.
Bake in a preheated static oven at 355°F for about forty minutes, until golden.
Remove from the oven and let your peach cake cool completely before finishing it with a dusting of powdered sugar if desired and serving.
