Ingredients

  • 2 eggs
  • 2 peaches
  • 3 1/2 tbsp vegetable oil
  • 2/3 cup water
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • Half packet baking powder
  • lemon zest (grated from one lemon)
  • powdered sugar (for decoration)

Preparation of Peach Muffins

  • Beat the eggs in a bowl with the water.
    Add the grated lemon zest and the vegetable oil and mix thoroughly.
    Combine sifted flour and baking powder, mixing well to avoid lumps. Also add the sugar and mix again until you get a smooth and homogeneous mixture.

  • Wash the peaches, dry them, remove the pit, and cut into cubes. Stir two-thirds into the prepared batter.
    Place paper liners in the muffin molds and fill them up to two-thirds of their capacity with the prepared batter.

  • Top the muffins with the remaining diced peaches distributed over their surface and bake in a preheated static oven at 350°F for twenty minutes.
    Take them out of the oven and let your peach muffins cool completely in the mold before placing them on a serving tray and topping them with a dusting of powdered sugar to taste.
