Ingredients
- 1.75 lbs salmon (4 fillets of 7 oz each)
- 14 oz shelled pistachios
- extra virgin olive oil
- salt
Preparing Pistachio-Crusted Salmon
Coarsely chop the pistachios in a food processor: just pulse it to get coarse crumbs.
Salt the salmon fillets and brush them with a little extra virgin olive oil.Spread the prepared pistachio crumbs on a flat plate and coat the salmon fillets, making sure the crumbs stick to all sides.
Place the prepared fillets on a baking sheet lined with parchment paper, without overlapping them, and bake in a preheated static oven at 392°F for ten minutes, then lower the temperature to 356°F and let bake for another ten minutes.
Remove from the oven and serve your pistachio-crusted salmon.
