Pizza pancakes are a tasty variation of savory pancakes, easy to make and very delicious.
Very quick to prepare, they are a very flavorful savory snack, perfect also for a quick dinner, brunch, or to accompany an aperitif with simple ingredients, almost like soft little flatbreads, cooked in a pan and very appetizing.

Ingredients
- 2 eggs
- 200 ml milk
- 180 g all-purpose flour
- Half packet instant yeast for savory preparations (8 g)
- 30 g grana cheese (grated)
- 150 g cherry tomatoes
- 200 g mozzarella
- oregano
- basil
- extra virgin olive oil
- salt
Preparation of pizza pancakes
Wash the cherry tomatoes, dry them, and cut them into wedges.
Drain the mozzarella well from its preserving liquid and cut it into cubes.
In a bowl, beat the eggs with the milk.When you have obtained a homogeneous mixture, incorporate the flour and yeast for savory preparations, stirring to prevent lumps.
Add the grated cheese and a pinch of salt.
Add the cherry tomatoes, mozzarella, a sprinkle of oregano, and a few torn basil leaves.
Mix until you have a homogeneous mixture.Heat a little extra virgin olive oil in a non-stick pan.
Pour in a ladle of the mixture and let it brown before flipping it to the other side.
Cook all your pizza pancakes in the same way until the batter is used up, then serve them.
