Poor Man’s Potatoes and Peppers

Ingredients

  • 5 potatoes
  • 1 red bell pepper
  • 1 red onion
  • 1.75 oz olives
  • 1 clove garlic
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Poor Man’s Potatoes and Peppers

  • Peel the potatoes and slice them to about 1/4 inch thick, then parboil them in salted boiling water for five minutes.
    Drain them and set them aside.
    Wash the bell pepper, remove the stem, seeds, and membranes, and cut it into strips.
    Peel the garlic clove.

  • Clean the red onion and slice it thinly.
    Heat some extra virgin olive oil in a large pan and let the garlic clove brown, then remove it and add the sliced onion and pepper strips.
    Cook for about ten minutes, stirring occasionally.

  • Add the reserved potatoes, season with salt, and cook for another five minutes, stirring occasionally.
    Finally, add the olives, let them flavor for a few minutes, then turn off the heat.
    Serve your Poor Man’s Potatoes and Peppers sprinkled with chopped parsley as desired.
