Ingredients
- 8 slices pork loin (thin)
- 1 1/2 cups peas
- 3 tbsp butter
- 1 espresso cup white wine
- 1 1/4 cups vegetable broth
- flour
- extra virgin olive oil
- salt
- pepper
Preparation of Pork Loin Scallops with Peas
Place some flour on a plate and coat the pork loin slices, covering them on all sides. Lightly pat them to remove excess flour.
Melt the butter in a medium pan over low heat. Once melted and the pan is hot, arrange the meat slices and cook them well on both sides.Deglaze with the wine, let it evaporate, then cover the pan with a lid and turn off the heat.
Boil the peas in plenty of salted boiling water, then drain and set aside.
In a saucepan, heat three tablespoons of extra virgin olive oil. Add three level tablespoons of flour and mix well to avoid lumps. Gradually add hot vegetable broth, stirring continuously, and let it cook until the sauce thickens.Add the peas and mix, then pour the prepared sauce over the meat and return the pan to the heat on low flame.
Let it cook for five minutes to flavor the pork loin slices and season with salt and pepper.
Serve your pork loin scallops with peas immediately, piping hot.
