Potato and prosciutto bites are a delicious appetizer or main course, easy to make and very tasty.
Roasted baby potatoes wrapped in soft slices of prosciutto, rich in flavor and very appetizing, perfect as an aperitif or as a main course for a family lunch or dinner with friends, absolutely irresistible: one leads to another!

Ingredients
- 2 lbs baby potatoes
- 5.3 oz Parma prosciutto (in slices)
- arugula
- Parmesan shavings
- rosemary
- extra virgin olive oil
- salt
Preparation of Potato and Prosciutto Bites
Wash the baby potatoes thoroughly under running water to remove any dirt and place them in a saucepan.
Cover them with cold water, bring to the heat, and let them cook for five minutes from boiling: when pierced with a fork, they should offer no resistance, but be softened.Drain and cut them in half or into wedges (peel them if you don’t like the skin).
Gather them in a bowl and season with extra virgin olive oil, salt, and chopped rosemary, mixing thoroughly.
Line a baking sheet with parchment paper and arrange the potatoes on it without overlapping.Bake them in a preheated oven, at 375°F for twenty to twenty-five minutes, until golden.
Meanwhile, divide the prosciutto slices into strips.
Wrap each potato wedge or half with a strip of prosciutto and place them on a serving plate.
Finish with Parmesan shavings and a bit of torn arugula, and serve your potato and prosciutto bites.
