The potato and ricotta pie is a tasty main dish or single course, easy to make.
Simple ingredients and lots of flavor for a perfect dish to prepare in advance, for example for an office lunch, or to prepare for lunch or dinner with family or friends, soft and rich in flavor.

Ingredients
- 1.1 lbs potatoes
- 1.1 cups ricotta
- 2 eggs
- 3.5 oz mortadella (or cooked ham or sliced salami)
- 1.8 oz grana cheese (grated)
- breadcrumbs
- extra virgin olive oil
- salt
Preparation of Potato and Ricotta Pie
Peel the potatoes, cut them into chunks, and place them in a pot.
Cover them with water and set the pot on the stove.
Cook for ten minutes from the boiling point, then drain the potatoes and mash them with a potato masher, collecting the puree in a bowl.Add the ricotta, eggs, grated cheese, and a pinch of salt, and mix thoroughly.
Chop the slices of mortadella (or cooked ham or salami) and fold them into the mixture.
Grease a baking dish with a bit of oil and sprinkle with breadcrumbs.
Pour in the prepared mixture, leveling it.Sprinkle a little more breadcrumbs on the surface, finish with a drizzle of extra virgin olive oil, and bake in a preheated static oven at 356°F for about half an hour, until golden brown.
Remove from the oven, let it cool slightly, and serve your potato and ricotta pie.
