Ingredients
- 25 oz potatoes
- 5.3 oz sausage (luganega type)
- 1 egg
- 1/3 cup all-purpose flour
- 1/2 cup Parmesan cheese (grated)
- white wine
- vegetable oil
- extra virgin olive oil
- salt
Preparation of Potato and Sausage Fritters
Remove the casing from the sausage and crumble it.
Heat a drizzle of extra virgin olive oil in a pan and brown the crumbled sausage.
Deglaze with a little white wine, let the alcohol evaporate, turn off and set aside.Peel the potatoes and grate them with a coarse grater, collecting the result in a bowl.
Add the sausage, grated Parmesan, flour, egg, and a pinch of salt and mix thoroughly.
Heat some vegetable oil in a deep-sided pan.Cook the prepared mixture in spoonfuls, a few at a time, for a few minutes on each side, until the desired level of golden brown.
Remove the potato and sausage fritters with a slotted spoon and let them dry from excess oil by placing them on a plate lined with kitchen paper or paper towels.
Serve immediately, very hot.
