Potato and Sausage Fritters

Potato and sausage fritters are a delicious appetizer or main course, easy to make and very tasty.

Crispy on the outside and soft on the inside, without pre-cooking the potatoes, quick to make and irresistible, they are perfect for lunch or dinner with family or friends, simple to make and full of flavor.

Ingredients

  • 25 oz potatoes
  • 5.3 oz sausage (luganega type)
  • 1 egg
  • 1/3 cup all-purpose flour
  • 1/2 cup Parmesan cheese (grated)
  • white wine
  • vegetable oil
  • extra virgin olive oil
  • salt

Preparation of Potato and Sausage Fritters

  • Remove the casing from the sausage and crumble it.
    Heat a drizzle of extra virgin olive oil in a pan and brown the crumbled sausage.
    Deglaze with a little white wine, let the alcohol evaporate, turn off and set aside.

  • Peel the potatoes and grate them with a coarse grater, collecting the result in a bowl.
    Add the sausage, grated Parmesan, flour, egg, and a pinch of salt and mix thoroughly.
    Heat some vegetable oil in a deep-sided pan.

  • Cook the prepared mixture in spoonfuls, a few at a time, for a few minutes on each side, until the desired level of golden brown.
    Remove the potato and sausage fritters with a slotted spoon and let them dry from excess oil by placing them on a plate lined with kitchen paper or paper towels.
    Serve immediately, very hot.
