Ingredients
- 1.5 lbs potatoes
- 4 spring onions
- 6.3 cups vegetable broth
- 3.5 tbsp cooking cream
- extra virgin olive oil
- salt
Preparation of Potato and Spring Onion Cream
Heat the vegetable broth.
Peel the potatoes and cut them into chunks.
Clean the spring onions and slice them thinly.Heat two tablespoons of oil in a saucepan and let the spring onions sauté.
Add the potatoes, stir to coat them, and add the hot broth.
Cover with a lid and let it cook for twenty minutes.Add the cooking cream, stir well, and let it cook for a couple more minutes.
Use an immersion blender to puree everything, then adjust the salt.
Serve immediately, hot, your potato and spring onion cream.
