The potato balls in the air fryer are delightful finger food appetizers, very easy to make.
Crunchy on the outside, but with a soft heart, they are tasty and perfect to accompany an aperitif or as a snack for a healthy salty break, prepared with very little oil and simple ingredients, without eggs and lactose.

Ingredients
- 10.5 oz potatoes
- 1.4 oz potato starch
- chives (*)
- parsley (*)
- extra virgin olive oil
- salt
*you can use other herbs and spices to your taste (for example paprika, rosemary, oregano, etc.)
Preparation of Potato Balls in Air Fryer
Peel the potatoes, cut them into chunks, and place them in a saucepan.
Cover them with cold water, bring the saucepan to the heat and cook them for eight minutes from the moment of boiling.
Drain and mash them using a potato masher, collecting the puree in a bowl.Add the potato starch, chopped chives and parsley, and a generous pinch of salt.
Form balls with the prepared mixture and place them in the air fryer basket lined with a sheet of parchment paper.Spray them with a little oil and cook at 390°F for eight to ten minutes, turning them halfway through cooking.
Serve your potato balls in the air fryer immediately, while hot.
