Potato chicche with stracchino are a tasty, creamy first course that is easy and quick to make.
A few simple ingredients and lots of flavor for a comforting first course that’s very quick to prepare, ready in just twenty minutes—perfect for a family lunch or dinner. Stracchino is a fresh Lombard cheese, very creamy and delicate, made from the milk of “stracch” cows (meaning tired, that is, fatigued after transhumance from mountain pastures to the plains). In this recipe stracchino creates a very soft and enveloping sauce with a delicate, slightly tangy and fresh flavor—light, not heavy, yet soft and tasty.

Ingredients
- 2.2 lb potato chicche
- 7 oz stracchino
- 3/4 cup cooking cream
- 3 tbsp grated Grana Padano (grated)
- salt
- pepper
Preparation of potato chicche with stracchino
Bring a pot full of water to the boil for cooking the potato chicche.
In a wide skillet or wok warm the cooking cream and add the stracchino, stirring to melt it completely.Salt the water, add the potato chicche and, as soon as they float to the surface, drain them using a slotted spoon and transfer them directly into the skillet with the sauce.
Add the grated Grana Padano and a little pepper and stir thoroughly.
Serve immediately, piping hot, your potato chicche with stracchino.
