Ingredients
- 4 potatoes (medium)
- 6 eggs
- 2.8 oz smoked scamorza cheese (or smoked provola cheese)
- 1 tbsp grana (grated)
- 1 tbsp pecorino (grated)
- spray oil
- salt
Preparation of the Potato Frittata in the Air Fryer
Peel the potatoes and slice them.
Gather them in a bowl, season with a little oil and a pinch of salt, and mix.
Place them in the air fryer basket and cook at 356°F for ten minutes, turning halfway through cooking.
Meanwhile, dice the scamorza cheese.In a small bowl, beat the eggs with a pinch of salt, then add the grated cheeses and mix again.
After the ten minutes of cooking, transfer the potatoes to a bowl.
Add the diced scamorza and the egg and cheese mixture, and mix thoroughly.Spray a pan suitable for cooking in your air fryer with oil and pour in the potato mixture, leveling it.
Cook in the fryer at 356°F for twenty to twenty-five minutes: after the first twenty minutes, check the cooking by lifting it to verify that the bottom is cooked, if not leave it to cook longer.
Let it cool slightly and serve your potato frittata in the air fryer.
