Potato Parmigiana

Potato Parmigiana is a tasty main course, easy to make and very appetizing.

Layers of delicious potatoes stuffed with ham, parmesan, and scamorza, a perfect main course for any occasion, for family dinner, with friends, or for lunch at the office.
It also lends itself to many customizations according to your tastes, for instance by replacing ham with speck or salami, or omitting any cold cuts for a vegetable-based version.

Ingredients

  • 1.8 lbs potatoes
  • 3.5 oz cooked ham
  • 7 oz scamorza
  • 1.5 cups béchamel sauce
  • 1.75 oz parmesan (grated)
  • salt

Preparation of Potato Parmigiana

  • Peel the potatoes and slice them thinly.
    Place them in a bowl and cover with cold water.
    Also slice the scamorza thinly.

  • Pour some béchamel sauce into a baking dish.
    Create a layer of potatoes without leaving gaps and season with salt.
    Add ham, scamorza, a sprinkle of grated cheese, and some béchamel sauce.

  • Make another layer of potatoes, season with salt, and add another layer with the same filling of scamorza, ham, etc..
    Cover with a final layer of potatoes, season with salt, and finish with the remaining béchamel sauce and more grated parmesan.
    Bake in a preheated static oven at 356°F for about forty minutes, until the desired level of golden brown is reached.
    Remove from the oven, allow to cool slightly, and serve your Potato Parmigiana.
