Potato Swirls

Potato swirls are a delicious appetizer or side dish, easy to make and very tasty.

Simple to prepare and very appetizing, they are perfect for accompanying an aperitif or as a side dish to any type of meat or fish dish.

Ingredients

  • 1.1 lbs potatoes
  • 1 egg
  • 1/2 cup grana (grated)
  • 1/4 cup breadcrumbs
  • 3.5 oz provola
  • parsley (chopped)
  • extra virgin olive oil
  • salt

Preparation of Potato Swirls

  • Peel the potatoes, cut them into chunks and put them in a pot.
    Cover them with water, bring the pot to the stove and let them cook for about ten minutes from boiling.
    In the meantime, thinly slice the provola cheese.

  • Drain the potatoes and mash them using a potato masher into a bowl.
    Add the egg, grated cheese, breadcrumbs, chopped parsley, and a pinch of salt, and mix thoroughly.
    Place a sheet of parchment paper on a work surface, pour the prepared mixture onto it, and spread it out forming a rectangle.

  • Place the provola cheese on the mixture and, using the underlying parchment paper, roll starting from the longest side to form a sausage shape.
    Cut it into slices about 3/4 inch thick, then place the potato swirls you’ve made on a baking tray lined with parchment paper and brush them with a bit of oil.

  • Bake them in a preheated convection oven at 392°F for about twenty minutes, until golden.
    Serve immediately, nice and hot.
