The potato, tomato, and onion casserole is a tasty vegetable side dish, easy to make and very delicious.
Perfect to accompany any type of dish, meat or fish, it can also be a vegetarian main course, to enjoy with good homemade bread.

Ingredients
- 4 potatoes
- 4 tomatoes
- 2 red onions (medium)
- 5.3 oz mozzarella (grated)
- basil
- extra virgin olive oil
- salt
Preparation of the Potato, Tomato, and Onion Casserole
Wash the potatoes, place them in a pot, cover with water, and put on the stove.
Let them cook for twenty minutes from boiling, drain and let them cool.
Peel them and cut into slices about 3/4 inch thick.Wash the tomatoes and cut them into slices the same thickness as the potatoes.
Clean the onions, and cut them into slices of the same thickness.
Oil a baking dish and arrange the slices of potatoes, tomatoes, and onion vertically and alternately as in the photo, until the dish is filled.Drizzle everything with a bit of extra virgin olive oil and salt.
Bake in a static oven preheated to 350°F for fifteen minutes.
Remove from oven, sprinkle with the grated mozzarella and bake for another fifteen minutes, possibly covering the dish with a sheet of aluminum foil if the surface darkens.
Remove from oven, scent your potato, tomato, and onion casserole by sprinkling it with fresh basil and serve.
