Ingredients

  • 1.76 lbs potatoes
  • 3.5 oz speck (in a single slice)
  • 10.6 oz red onions
  • rosemary
  • extra virgin olive oil
  • salt

Preparation of Potatoes with Speck and Red Onions

  • Peel the potatoes and cut them into slices about 1/4 inch thick.
    Peel the onions and slice them.
    Cut the speck into matchsticks.

  • In a large non-stick pan, heat a dash of extra virgin olive oil.
    Add the onion slices and sauté them for a few minutes, then add the potato slices and adjust the salt.
    Add a glass of water and cover the pan with a lid.

  • Cook for ten to fifteen minutes over medium heat, stirring occasionally and adding a little more water if needed to prevent the potatoes from sticking to the bottom, until the potatoes are tender.
    Add the speck, season with rosemary, and cook for another five minutes.
    Turn off the heat and serve your potatoes with speck and red onions immediately, very hot.
