Preparation of Puff Pastry Cones with Ricotta

  • Unroll the puff pastry on a work surface and cut it into 1-inch wide strips along the longer side of the rectangle.
Wrap each strip around a cone-shaped cannoli mold (if you don’t have them, you can make them with food-grade aluminum).

  • Beat the egg in a small bowl and brush it over each pastry cone, then place the cones on a baking sheet lined with parchment paper and bake them in a preheated fan oven at 350°F for about fifteen minutes, until golden.
Remove from the oven and let them cool.

  • Meanwhile, in a bowl, work the ricotta into a cream with a pinch of salt and a little chopped chives, then transfer the mixture into a piping bag.
Gently remove the cones from the molds and fill them with the prepared ricotta cream.
Your puff pastry cones with ricotta are ready to be served.
