Ingredients for the pumpkin and mascarpone tart
- 2 cups all-purpose flour
- 5 oz butter
- 1/2 cup sugar
- 1 egg
- 2 teaspoons ground cinnamon
- 2 cups pumpkin (cleaned and diced)
- 9 oz mascarpone
- 2 eggs
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- powdered sugar
Preparation of the pumpkin and mascarpone tart
Place the diced pumpkin in a non-stick pan with two tablespoons of water.
Cover with a lid and cook on low heat for ten minutes.
Remove the lid, let the liquid evaporate, transfer the pumpkin cubes to a mixer and blend them.
Let cool.While the pumpkin cooks, prepare the base.
In a large bowl, pour the flour, sugar, softened butter cut into pieces, and cinnamon, and knead until you get a crumbly mixture.
Add the egg and knead firmly until you have a smooth and homogeneous dough.
Wrap it in plastic wrap and let it rest in the refrigerator for at least half an hour.Prepare the filling. Mix the now cold pumpkin pulp with the mascarpone, two eggs, sugar, and a teaspoon of ground cinnamon until you get a smooth, lump-free mixture.
Roll out the base into a circle suitable for covering the bottom and edges of a greased and floured 9-inch diameter cake pan.Place the base in the cake pan, adjust the edges, and pour in the prepared pumpkin mixture.
Bake in a preheated static oven at 350°F for about 50 minutes, until the filling is set.
Let cool completely, sprinkle with powdered sugar as desired, and serve your pumpkin and mascarpone tart.
