Pumpkin and Potato Gratin

The pumpkin and potato gratin is a tasty vegetable side dish, easy to make and very delicious.

A quick cook on the stove and then in the oven, a perfect dish to accompany any type of meal, or even to enjoy on its own with some good rustic bread.

Ingredients

  • 18 oz pumpkin (already cleaned)
  • 2 potatoes
  • 1 white onion
  • 2 eggs
  • 2 tbsps milk
  • grana cheese (grated)
  • butter
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Pumpkin and Potato Gratin

  • Cut the pumpkin into chunks.
    Peel the potatoes and cut them into pieces similar in size to the pumpkin for even cooking.
    Thinly slice the onion.

  • Melt a knob of butter in a large non-stick pan and let the onion sauté until it becomes transparent.
    Add the pumpkin and potato cubes, mix to flavor and cook for about ten minutes, stirring occasionally.
    Season with salt and pepper and place them in a baking dish greased with extra virgin olive oil.

  • In a bowl, beat the eggs with the milk and pour them into the baking dish.
    Sprinkle a generous amount of grated cheese on the surface and bake in a preheated static oven. At 392°F for half an hour.
    Serve your pumpkin and potato gratin immediately, piping hot.
