Pumpkin and Potato Rösti

Pumpkin and potato rösti are a delicious vegetable side dish, easy and quick to prepare.

Rösti is a Swiss dish made with grated potatoes. In the following recipe, potatoes are accompanied by pumpkin and some other aromatic ingredients for delicious finger food, also perfect as an appetizer to accompany aperitifs.

Ingredients

  • 7 oz pumpkin (already cleaned)
  • 1.1 lbs potatoes
  • 0.5 cup flour
  • 0.5 cup Parmesan cheese (grated)
  • parsley
  • rosemary
  • extra virgin olive oil
  • salt

Preparation of Pumpkin and Potato Rösti

  • Clean a bunch of parsley and a sprig of rosemary with a damp paper towel and chop them.
    Grate the pumpkin with a coarse grater, collecting the result in a bowl.
    Peel the potatoes, rinse them under running water, and then grate them with the same tool.

  • Add the grated potatoes to the grated pumpkin and add the flour, grated cheese, chopped parsley and rosemary, and a pinch of salt, and mix thoroughly.

  • Heat a little extra virgin olive oil in a non-stick pan and cook the prepared mixture by spoonfuls over medium heat, a few minutes per side, until golden brown.
    Let them drain the excess oil by placing them on a plate lined with kitchen paper and serve immediately, hot, your pumpkin and potato rösti.
