Ingredients

  • 7 oz pumpkin (already cleaned)
  • 3.5 oz all-purpose flour
  • 1/4 cup milk
  • 1 tsp sugar
  • 1 tsp baking powder
  • 1 egg
  • ground cinnamon
  • butter
  • honey (or maple syrup)
  • chocolate chips (optional)

Preparation of Pumpkin Pancakes

  • Cut the pumpkin into cubes, place it on a baking sheet lined with parchment paper, and bake it in a preheated static oven at 350°F for half an hour (or steam it). Blend it until you get a puree and let it cool.

  • Place it in a bowl and add the milk, egg, and a pinch of cinnamon and mix everything with a whisk.
    Add the flour, sugar, and baking powder and mix again until you have a smooth and homogeneous mixture.
    Heat a knob of butter in a small pan and pour a ladle of the prepared mixture, gently rotating the pan to create a disk.

  • Let it cook until it sets and bubbles form on the surface, then with the help of a spatula, turn the pancake over and cook it on the other side as well.
    Serve your pancakes by drizzling them with honey (or maple syrup) and, if desired, with dark chocolate chips.
