Pumpkin spice milk is a delicious autumn drink made with pumpkin and spices, an aromatic and irresistible pumpkin cappuccino.

Ingredients for Pumpkin Spice Milk

  • 2.8 oz pumpkin pulp (pureed * see notes at the end of the recipe)
  • 3.5 oz water
  • 2 tbsps brown sugar
  • 1 pinch ground ginger
  • 1 pinch nutmeg
  • 1 pinch ground cinnamon (+ more for decorating the cappuccino)
  • 1 cup coffee
  • 0.8 cup milk (dairy or plant-based as long as it foams well)

  • 1 Milk Frother

Preparation of Pumpkin Spice Milk

  • In a small pot, heat the water with the sugar and spices until the sugar is dissolved and the water begins to boil.
    Add the pumpkin puree, lower the heat, and let it cook for ten minutes.

  • In the meantime, heat the milk and froth it with a milk frother.
    Prepare the coffee.
    Set aside the frothed milk and pour the rest into the pumpkin mixture.

  • Pour the coffee into the bottom of the cup, add the milk and pumpkin mixture, and finish with the reserved milk foam and a sprinkle of cinnamon.
    Serve immediately, piping hot, your pumpkin spice latte.

Notes

* A quick way to prepare pureed pumpkin is to cut the pumpkin into cubes, place it in a non-stick pan without overlapping the pieces with a couple of tablespoons of water, cover the pan with a lid, and let it cook on low heat for ten minutes, then remove the lid, let the cooking liquid evaporate, and blend the pumpkin.
