Ingredients

  • 1 zucchini (large)
  • 1 3/4 cups all-purpose flour
  • 2.8 oz cooked ham
  • 2.8 oz smoked scamorza cheese
  • pecorino cheese (grated)
  • Half packet instant yeast for savory preparations (8 g)
  • extra virgin olive oil
  • seed oil
  • salt

Preparation of Quick Zucchini Breads

  • Wash the zucchini, dry it, trim it, and grate it.
    Mince the cooked ham and grate the scamorza cheese.

  • In a large bowl, combine the flour, grated zucchini, ham, scamorza cheese, three tablespoons of extra virgin olive oil, instant yeast for savory preparations, three tablespoons of grated pecorino cheese, and a pinch of salt.
    Knead thoroughly until you get a compact dough.

  • Heat a layer of seed oil in a pan with high sides.
    With floured hands, form dough balls and flatten them between your palms.
    Cook them in the hot oil, keeping the heat low and turning them often, until they are puffed and golden.
    Serve your quick zucchini breads hot.
