Scallions are onions that have not yet reached full maturity, they have a softer texture than onions and a more delicate and slightly sweet taste, they are rich in vitamin B and C and have diuretic properties. Prepared in sweet and sour sauce, with brown sugar and Modena balsamic vinegar, they are perfect to accompany any type of main course, meat, fish, vegetables, or eggs, or even spread on bread and crostini for a tasty appetizer.

Ingredients
- 1 bunch red Tropea scallions
- 2 teaspoons brown sugar
- 2 tablespoons Modena balsamic vinegar
- extra virgin olive oil
- salt
Preparation of Red Tropea Scallions in Sweet and Sour Sauce
Wash the scallions to remove any soil traces, cut off the beard and remove the green part up to half an inch from the head.
Chop the remaining part.In a pan, heat a drizzle of extra virgin olive oil, add the scallions and let them sauté for a few minutes.
Add a pinch of salt and the sugar, then wet them with balsamic vinegar, cover with a lid, and let cook on low heat for thirty minutes, stirring occasionally and adding a bit of water if needed.
Turn off, let cool, and serve your red Tropea scallions in sweet and sour sauce.
