Rice and Potato Soup

The rice and potato soup is a tasty, warm first course comfort food, easy and quick to make and truly irresistible.

A real treat for the palate on colder days, perfect for a family dinner after a long day at work and ready in about half an hour with simple ingredients, almost always present in the pantry.

Ingredients

  • 1 cup cup rice for soups
  • 1 lb lb potatoes
  • vegetable broth
  • 2 tablespoons tomato purée
  • 1 clove onion
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Rice and Potato Soup

  • Clean the onion and slice it thinly.
    Peel the potatoes and cut them into cubes.
    Heat a few tablespoons of extra virgin olive oil in a large pot and sauté the onion until golden.

  • Add the potatoes, let them brown on all sides, and add a quart of hot vegetable broth and two tablespoons of tomato purée.
    Cook over medium heat for a few minutes, stirring well, then also add the rice and let it cook for the time indicated on the rice package, stirring occasionally and adding more hot broth as needed.

  • When the rice is cooked, adjust the salt, stir, and turn off the heat.
    Serve your rice and potato soup immediately, very hot, adding a little chopped parsley and grated cheese if desired.
