Ingredients

  • 1 roll puff pastry (rectangular)
  • 12 oz spinach (fresh)
  • 3/4 cup ricotta
  • 1/2 cup grated Grana Padano (or Parmesan) (grated)
  • 1 egg yolk
  • salt

Preparation of Ricotta and Spinach Puff Pastry Bites

  • Wash the spinach under running water, removing any traces of soil, and rinse thoroughly.
    Drain them, place them in a pan, cover with a lid and let them cook for about ten minutes over medium heat, stirring occasionally.
    Once cooked, chop them with a knife and put them in a bowl.

  • Add the ricotta, a pinch of salt and the grated Grana Padano and mix well until you obtain a smooth cream.
    Transfer it to a piping bag fitted with a wide plain tip.
    Unroll the puff pastry and cut it into three strips along the longest side.
    Using the piping bag, pipe a strip of filling down the center of each pastry strip and then fold the pastry edges over the filling, sealing it inside to obtain three logs.

  • Cut each log into pieces about 2 inches long and place the bites thus created on a baking tray lined with parchment paper, spacing them apart.
    With a smooth-bladed knife make two shallow cuts on each bite to prevent them from puffing up too much during baking.
    Beat the egg yolk in a small bowl with a splash of water and brush it over the bites.
    Bake in a preheated static oven at 356°F for about twenty minutes, until golden.
    Remove from the oven and serve your ricotta and spinach puff pastry bites.
