Ingredients
- 5 eggs
- 18 oz ricotta
- 2 oz grana cheese (grated)
- parsley
- extra virgin olive oil
- salt
Preparation of the Ricotta Omelette
Clean a bunch of parsley with damp kitchen paper and chop it.
In a bowl, beat the eggs with a pinch of salt.Add the grated cheese, ricotta, and parsley, and mix thoroughly until you obtain a homogeneous mixture.
Butter and flour an 8-inch diameter cake pan and pour in the prepared mixture.Bake in a preheated static oven at 356°F for about twenty-five minutes, until golden.
Remove from the oven, let it cool slightly, and serve your ricotta omelette.
Notes
You can vary the recipe according to your taste, for example, by using another type of grated cheese or other aromatic herbs, adding sliced deli meats, etc., and you can also cook the omelette in a pan.
