Romagna-Style Chicken

Romagna-style chicken is a rustic and very tasty main course, easy to prepare.

Perfect for Sunday lunch or a dinner with friends, it is slow-cooked with an intense and irresistible flavor.

Ingredients

  • 2.6 lbs chicken pieces (thighs and drumsticks)
  • 2 onions
  • 3.5 oz pancetta (in a single slice)
  • 2.5 cups tomato sauce
  • 1 cup red wine
  • extra virgin olive oil
  • salt

Preparation of Romagna-Style Chicken

  • In a large pot, heat a swirl of extra virgin olive oil and brown the chicken pieces on all sides for about ten minutes until they are well browned.
    In the meantime, clean the onion and chop it coarsely.

  • Chop the pancetta into pieces as well.
    Add them to the chicken, stir for a few minutes until the onion is golden, and deglaze with the red wine.
    Let the alcohol evaporate and add the tomato sauce.
    Stir, cover the pot leaving a ladle across to let some steam escape, and lower the heat.

  • Let it cook for an hour, adding hot water occasionally if needed to prevent the cooking base from drying out.
    When the chicken is done, remove it and set it aside.
    Strain the cooking base, return it to the pot, and bring it to a boil to reduce.
    Add the chicken pieces back, stir to flavor, and serve your Romagna-style chicken immediately, hot.
