Ingredients
- 5 oz smoked salmon
- 1 avocado
- 1 bunch arugula
- 2 cups cherry tomatoes
- lemon juice (from one lemon)
- extra virgin olive oil
- salt
Preparation of the Salmon Avocado and Arugula Salad
Wash the arugula, separate the leaves from the stems, discarding the latter, and dry it in a salad spinner.
Clean the avocado, cut it into chunks, and place it in a bowl. Drizzle it with the juice of one lemon and set aside.
Wash the cherry tomatoes and cut them in half.
Cut the smoked salmon into pieces.
In a large bowl, combine the arugula leaves, halved cherry tomatoes, avocado, and smoked salmon.
Season with extra virgin olive oil, mix thoroughly, and then adjust the salt to taste.
Serve your salad of salmon, arugula, avocado, and cherry tomatoes.
