The sandy cake, or cake of 3, is a delicious pantry cake, easy to prepare.
A delicious crust with a very soft heart, a grandma’s recipe with lots of butter, but irresistible, perfect for breakfast or a snack, a cake that takes you back to childhood, to be enjoyed every now and then. It’s called the cake of 3 because it is made with 3 eggs, 300 g of potato starch, sugar, and butter and little else, so a rather simple recipe to remember.

Ingredients
- 3 eggs
- 2 1/2 cups potato starch
- 1 1/2 cups sugar
- 1 1/3 cups butter
- Half packet baking powder
- 1 pod vanilla (the seeds)
Preparation of the Sandy Cake
Separate the yolks from the whites, placing the former in a small bowl and whisking the whites until stiff and setting them aside.
In a large bowl, place the softened butter with the sugar and the seeds from a vanilla pod and whip them until you get a fluffy mixture.
Add the yolks slightly beaten with a fork in a stream, continuing to mix.Gradually add the sieved potato starch and baking powder, stirring to avoid lumps.
Incorporate the whipped egg whites with a spatula and gentle movements from bottom to top.
Butter and flour, or line with parchment paper, a 9 1/2 inch springform pan and pour in the prepared mixture.Bake in a pre-heated static oven at 320°F for forty-five, fifty minutes: do the toothpick test to check that, when finished baking, a toothpick inserted into the cake comes out dry.
Remove from the oven, let cool completely, and serve your sandy cake.
