Sausage risotto is a tasty main course, very easy to prepare.
Few simple ingredients for a perfect dish on any occasion, whether it’s lunch or dinner with family or friends, with a unique flavor depending on the type of sausage used to prepare it.

Ingredients
- 1 1/2 cups risotto rice
- 14 oz sausage
- 4 1/4 cups broth
- 1 clove onion
- 1/4 cup white wine
- extra virgin olive oil
- butter
- Parmesan cheese (grated)
- chopped parsley
Preparation of the Sausage Risotto
Remove the casing and crumble the sausage.
In a large pan, heat a drizzle of extra virgin olive oil, add the crumbled sausage, and brown it on all sides.
Deglaze with the white wine, let the alcohol evaporate, and set aside.
Chop the onion.In a large pot, heat two tablespoons of extra virgin olive oil and a knob of butter.
When the butter has melted, add the chopped onion and let it brown, then add the rice and toast it for a few minutes.
Add a ladleful of already hot broth at a time and cook the rice according to the time indicated on the package.When there are three or four minutes left to the end of cooking, add the sausage with its cooking juices and mix well, then wait for the rice to be cooked, adding more broth if necessary.
Turn off the heat and stir your sausage risotto with another knob of butter and grated Parmesan cheese to taste and serve, if desired, sprinkled with chopped parsley.
