Savory Mini Cheesecakes

Savory mini cheesecakes are delightful single-serving appetizers, very easy to prepare.

A base of breadsticks, crackers, or taralli, a delicious cheese filling, and a savory topping to taste, such as cured meats, smoked salmon, cherry tomatoes, olives, or whatever your imagination suggests. Their size makes them more versatile compared to larger versions like the savory cheesecake with tomatoes or the Christmas savory cheesecake with salmon, perfect for satisfying all your guests as an appetizer or to accompany aperitifs.

Ingredients

  • 5.3 oz breadsticks (or taralli or crackers)
  • 7.1 oz spreadable cheese
  • 5.3 tbsp butter
  • 0.4 cup grana (grated)
  • 2.4 tbsp milk
  • smoked salmon
  • cherry tomatoes
  • cured meats
  • olives

Preparation of Savory Mini Cheesecakes

  • Melt the butter in a saucepan over low heat or in the microwave.
    Finely crush the breadsticks and gather everything in a bowl.
    Add the melted butter and mix thoroughly.

  • Divide the mixture into six silicone muffin molds (or paper liners placed in a metal 6-cup muffin tray), pressing firmly on the bottom.
    In a large bowl, cream the spreadable cheese with the grated grana and the milk until you have a smooth and creamy mixture.

  • Spread it over the breadstick base in the molds, smoothing the surface.
    Refrigerate the molds for at least half an hour.
    After this time, remove your savory mini cheesecakes from the molds and garnish as desired with smoked salmon, cured meats, cherry tomatoes, olives, or other ingredients according to your taste and imagination.
    They can be stored in the refrigerator well covered with plastic wrap for a few days, or they can be frozen.
