Ingredients
- 7 oz cherry tomatoes
- 3.5 oz stracchino
- 3 eggs
- 2.5 cups all-purpose flour
- 7 tbsp vegetable oil
- 7 tbsp milk
- 1.1 oz Parmesan cheese (grated)
- extra virgin olive oil
- oregano
- 1 packet instant yeast for savory preparations
- salt
Preparation of the Savory Pie with Cherry Tomatoes and Stracchino
Wash the cherry tomatoes, dry them and cut them in half.
Place them in a small bowl and season with a bit of oregano and a drizzle of extra virgin olive oil.
Sift the flour and the instant yeast for savory preparations into a large bowl and mix them.Make a well in the center and pour in the vegetable oil, milk, and eggs. Starting from the center, beat with a fork or a hand whisk, mixing the liquids and gradually absorbing the dry ingredients, until you have a smooth batter.
Add the grated cheese and half a teaspoon of salt, and mix to incorporate them.
Add half of the cherry tomatoes, drained from the liquid that has formed, and mix again.Butter and flour a cake pan with a diameter of 9.5 inches and pour in the prepared batter, leveling it.
Spread the remaining tomatoes, also drained, and the stracchino on top.Finish with a drizzle of extra virgin olive oil and a sprinkle of oregano, and bake in a preheated fan oven at 320°F for thirty minutes: check the doneness with a skewer, which should come out dry when inserted into the pie, otherwise extend the cooking time a bit.
Remove from the oven, and serve your savory pie with cherry tomatoes and stracchino warm or cold.
