The savory pumpkin cappuccino is a delightful autumn appetizer made with pumpkin, easy to make and very tasty.
It obviously owes its name to the resemblance of the plating to a cappuccino. It is actually a tasty pumpkin cream, decorated with a thick Greek yogurt cream, and spiced.
The pumpkin, the symbolic vegetable of autumn, so versatile in the kitchen that it can be used for any type of course, from appetizers, to first courses and second courses, to side dishes and desserts, in this recipe becomes a special appetizer perfect for any occasion, from a brunch with friends to an aperitif, as a starter for lunch or dinner or for festive days.

Ingredients
- 10.5 oz pumpkin
- 3.5 oz potatoes
- 2/3 cup heavy cream
- 5.3 oz Greek yogurt
- 1 leek
- vegetable broth
- rosemary
- ground ginger
- paprika
- extra virgin olive oil
- salt
- pepper
Preparation of the Savory Pumpkin Cappuccino
Peel the pumpkin, remove the fibers and seeds, and cut it into cubes.
Peel the potatoes and cut them into cubes of the same size as the pumpkin.
Clean the leek and slice it thinly.In a small saucepan, heat a drizzle of extra virgin olive oil.
Sauté the leek with a sprig of rosemary.
Add the pumpkin and potato cubes and let them sauté for a few minutes, stirring continuously.
Season with salt and pepper, then add enough hot vegetable broth to cover the vegetables.Let it cook until the pumpkin is very soft, adding more hot broth if the cooking liquid dries up too much.
Remove the rosemary, season to taste with paprika and grated ginger, and blend everything with a hand blender until you obtain a thick and homogeneous cream.In a bowl, whisk together the Greek yogurt with the heavy cream until you have a thick and creamy mixture.
Divide the pumpkin cream among the serving glasses or cups, cover with a few spoonfuls of the prepared yogurt cream, and complete your savory pumpkin cappuccino with a dusting of paprika.
