Ingredients
- 8 eggs
- 10.5 oz cherry tomatoes
- 1 onion
- 2 tbsp cheese (grated)
- basil
- extra virgin olive oil
- salt
- pepper
Preparation of Scrambled Eggs with Tomatoes
Wash the cherry tomatoes and cut them into wedges.
Clean the onion and slice it thinly.
In a large pan, heat a few tablespoons of extra virgin olive oil and let the onion turn golden.Add the cherry tomato wedges, cover with a lid, and let cook for about five minutes over a lively flame until the tomatoes are wilted.
In the meantime, in a large bowl, lightly beat the eggs with the grated cheese, salt, and pepper.Pour the mixture over the wilted cherry tomatoes, let it set slightly, and stir with a spatula until cooked.
Serve your scrambled eggs with cherry tomatoes immediately, garnished with a few fresh basil leaves.
