Ingredients for Shortcrust Paradise Cake
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup butter
- 1 egg
- 1 package vanilla
- 3/4 tsp baking powder (scant teaspoon)
- 9 oz mascarpone
- 1 cup whipping cream
- 1/3 cup powdered sugar
- hazelnut crumbs
- powdered sugar
Preparation of Shortcrust Paradise Cake
First, prepare the shortcrust bases.
In a large bowl, mix the flour, sugar, baking powder, and vanilla.
Add the butter in pieces and knead until you get a sandy mixture.
Add the egg and knead vigorously until the dough is smooth and homogeneous.
Form a ball, wrap it in cling film and let it rest in the refrigerator for half an hour.After the resting time, divide the dough in half and roll each half out with a rolling pin to form a 8-inch diameter disc.
Place the two discs on a baking sheet lined with parchment paper and bake them in a fan oven at 356°F for 12 minutes.
Remove from the oven and let them cool completely.Prepare the filling.
Put the mascarpone, powdered sugar, and cold liquid whipping cream in a bowl and whip everything with electric beaters until you have a smooth and compact cream.
Cover the bowl with cling film and put the cream in the refrigerator until it’s time to use it.When the shortcrust discs are cold, assemble the cake.
Put the prepared cream in a pastry bag with a smooth and wide nozzle.
Place one shortcrust disc on a tray or serving plate, cover it with the cream, and close it with the second shortcrust disc, pressing gently to adhere to the filling.Attach the hazelnut crumbs to the edges and sprinkle the top generously with powdered sugar.
Let it rest in the refrigerator for an hour and then serve your shortcrust paradise cake.
