Ingredients
- 1.76 lbs potatoes
- 3.5 oz caciocavallo (or grated pecorino)
- 3 eggs
- 1 clove garlic (optional)
- 2/3 cup breadcrumbs
- chopped parsley (or chopped mint)
- oil (for frying)
- salt
Preparation of Sicilian Potato Patties
Peel the potatoes and cut them into chunks.
Place them in a pot, cover with water, and cook for about fifteen minutes from the boiling point, until tender.
Drain well and mash them with a potato masher. Collect the puree in a bowl and let it cool.Add the eggs, grated cheese, breadcrumbs, chopped garlic clove, a generous pinch of salt, and chopped parsley.
Mix thoroughly until you have a homogeneous and firm mixture.
With moistened hands, form patties and slightly flatten them, arranging them on a tray without overlapping.
Cover the tray and let the patties rest in the refrigerator for at least half an hour.Heat plenty of oil for frying in a high-sided pan.
Fry your Sicilian potato patties a few at a time, turning them gently on all sides, until golden brown.
Remove them with a slotted spoon and let them drain of excess oil by placing them on a plate lined with paper towels or kitchen paper.
Serve immediately, piping hot.
