Sicilian Ricotta Cake

The Sicilian ricotta cake is a delicious pantry cake, very soft and easy to prepare.

Simple ingredients, without butter or oil, it is a perfect cake for any occasion, for breakfast, snack, or even as a dessert.

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1 cup ricotta
  • 2 cups flour
  • 1/2 cup chocolate chips
  • 1 packet baking powder
  • powdered sugar (for decoration)

Preparation of Sicilian Ricotta Cake

  • Beat the eggs with the sugar for a long time, until you get a very light and fluffy mixture.
    Add the ricotta, continuing to use the beaters.
    Stir in the chocolate chips with a spatula.

  • Finally, incorporate the sifted flour and baking powder, always with a spatula and gentle movements so as not to deflate the mixture, until it is smooth and homogeneous.
    Butter and flour a cake pan with a diameter of 9.5 inches and pour in the prepared mixture.

  • Bake in a preheated static oven at 350°F for about thirty to thirty-five minutes, testing with a toothpick after the first half hour: if the toothpick comes out dry, the cake is ready.
    Remove from the oven, let it cool completely and transfer it to a plate or tray.
    Sprinkle your Sicilian ricotta cake with powdered sugar to taste and serve.
