Ingredients
- 2 apples
- 2 eggs
- 1/2 cup sugar
- 1/2 cup butter
- 2 3/4 cups all-purpose flour
- 1 packet baking powder
- ground cinnamon
- powdered sugar
Preparation of Soft Apple Cookies
In a large bowl, using electric beaters, beat the eggs with the sugar.
Add the softened butter in pieces, continuing to mix with the beaters until well incorporated.
Add the sifted flour and baking powder, mixing with a spoon, until you have a homogeneous mixture.Peel the apples, remove the core and seeds, and cut them into small pieces.
Add them to the mixture, still stirring with the spoon, until incorporated.
Line a baking tray with a sheet of parchment paper.Place the mixture in mounds using the spoon, keeping them spaced as they will grow during baking.
Bake in a preheated static oven at 350°F for twenty minutes, then remove them and let them cool.
Mix a few tablespoons of powdered sugar with a little ground cinnamon and sprinkle over your soft apple cookies.
