Ingredients
- 1 1/2 cups all-purpose flour
- 2/3 cup unsweetened cocoa powder
- 2 eggs
- 3/4 cup sugar
- 1/2 cup vegetable oil
- 3/4 cup water
- 1 teaspoon vanilla extract
- 1 packet baking powder
- powdered sugar (for decoration)
Preparation of the Soft Cocoa Cake
In a large bowl, with electric beaters, whisk the eggs with the sugar and a teaspoon of vanilla extract until light and fluffy.
Gradually add the oil, continuing to use the electric beaters, and then the room temperature water.Add the flour, unsweetened cocoa powder, and baking powder, continuing to mix with the beaters.
Once you have a smooth and homogeneous mixture, grease and flour an 18-20 cm (7-8 inch) diameter cake pan.Pour the prepared mixture into it and bake your soft cocoa cake in a preheated static oven at 350°F for thirty-five minutes, using the toothpick test to check if it’s well-cooked (if a wooden toothpick inserted into the cake comes out dry, remove it from the oven, otherwise continue baking for a few more minutes).
Let the cake cool completely in the pan before transferring it to a serving plate and decorating it as you like with powdered sugar.
