Ingredients
- 2 lemons (organic)
- 3 eggs
- 3/4 cup sugar
- 1/3 cup vegetable oil
- 1 1/4 cups flour
- 1 teaspoon baking powder
- powdered sugar (for decoration)
Preparation of the Soft Lemon Bundt Cake
Wash the lemons, grate the zest, and squeeze the juice.
In a large bowl, beat the eggs with the sugar for a long time: you should get a light and fluffy mixture.
Add the oil, grated zest, and strained lemon juice.Add the sifted flour and baking powder, incorporating them with a spatula and gentle upward movements, until you get a homogeneous mixture.
Grease and flour a 9.5-inch bundt pan and pour in the prepared mixture.Bake in a preheated static oven at 350°F for twenty-five to thirty minutes: do the toothpick test to check the cooking.
Remove from the oven, let cool completely in the pan, and then unmold your soft lemon bundt cake onto a serving dish.
Decorate as desired with powdered sugar and serve.
