Soft Strawberry and Yogurt Cake

Ingredients

  • 18 oz strawberries
  • 1 cup plain Greek yogurt
  • 3 eggs
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • lemon zest (zest of one lemon)
  • 2 cups all-purpose flour
  • 1/3 cup potato starch
  • 1 packet baking powder
  • powdered sugar (for decoration)

Preparation of the Soft Strawberry and Yogurt Cake

  • In a large bowl, whisk the eggs with the sugar until they double in volume.
    Add the yogurt, grated lemon zest, and vegetable oil, continuing to mix with the beaters.
    Incorporate the sifted flour, potato starch, and baking powder.

  • Wash the strawberries and cut 14 oz into pieces and leave the rest in slices to decorate the cake surface.
    Add the 14 oz of strawberry pieces to the cake batter, mixing with a spatula.
    Grease and flour, or line with parchment paper, a 9-inch diameter cake pan and pour in the prepared mixture.
    Place the strawberry slices on the cake surface.

  • Bake in a preheated static oven at 338°F for forty-five to fifty minutes, doing the toothpick test by inserting it into the center of the cake: when done, the toothpick should come out dry.
    Let the soft strawberry and yogurt cake cool in the pan before transferring it to a plate or serving tray and decorating it as desired with powdered sugar.
