Spaghetti alla Gennaro

Spaghetti alla Gennaro is a traditional Neapolitan first course dedicated to the patron saint of Naples.

It is said to have been Totò’s favorite dish, according to the testimony of his daughter Liliana De Curtis, who included the recipe in her cookbook. It’s a simple dish with few ingredients, but rich in taste and flavor, and is prepared in a few minutes, perfect for any occasion.

Ingredients

  • 320 g spaghetti
  • 4 slices stale bread
  • 4 fillets anchovies
  • 2 cloves garlic
  • oregano
  • basil
  • extra virgin olive oil
  • salt

Preparation of Spaghetti alla Gennaro

  • Put a large pot of water on the stove for cooking the pasta and bring it to a boil.
    In the meantime, peel a clove of garlic and rub it on the slices of stale bread.
    Coarsely crumble the bread.

  • Heat a few tablespoons of extra virgin olive oil in a pan.
    Add the other clove of garlic, unpeeled, and the crumbled bread.
    Let it brown and set aside.

  • In a large pan or wok, heat a base of extra virgin olive oil and let the chopped anchovies melt with oregano while you cook the spaghetti al dente (also adding salt to the pasta water).
    Add the spaghetti to the oil with the anchovies along with the bread and some basil leaves, gently mix and serve your Spaghetti alla Gennaro immediately.
